Cantin is one of those very rare wines where the extreme complexity of the terroirs creates a a homogeneity that becomes "the" symphony of the wine. The property stretches out on the East side of the Saint Emilion butte. The merlot imparts the fruitness, rich and smooth structure and a complexity necessary to aging. The dominant aromas are dark berry fruits like blueberries and animal traces. There are also hints of fresh violets, spicy hints of cinnamon and in hot years hints of liquoirice "mint". In the mouth it is a sensual delight. Silky, plump tanins hide the austerity of the structure.
